Ingredients

Salad:

3–4 medium zucchini

1 cup cherry tomatoes, halved

1⁄4 cup thinly sliced red onion

1⁄4 cup fresh parsley

2 tablespoons fresh basil or mint

Dressing:

3 tablespoons olive oil

2 tablespoons lemon juice

1⁄2 teaspoon salt

1⁄4 teaspoon pepper

Directions:
