Never heard of a cabbage steak before? Neither had I until I found this vegetarian recipe and wanted to give it a try!
These cabbage steaks are recommended as the perfect dinner side dish or even a main vegetarian meal!

What You’ll Need
Start making Cabbage Steaks at home by picking up a few small cabbages, spices, and oil to get started. This easy-to-make meal is flavorful and pairs well with mashed potatoes, polenta, or any of your favorite sides.
Ingredients:
1-2 small cabbage (green and/or purple)
2 tablespoons extra-virgin olive oil
½ teaspoon garlic powder
Heaping ¼ teaspoon sea salt
Freshly ground black pepper
Lemon wedges, for squeezing
Directions:
Preheat the oven to 425°F and line a baking sheet with parchment paper.
Remove loose outer cabbage leaves, slicing off the bottom of the core to create a flat base. Slice the cabbage vertically into 1-inch-thick steaks. Arrange in a single layer on the prepared baking sheet.
In a small bowl, stir together the olive oil, garlic powder, and salt.
Brush half onto one side of the cabbage steaks. Flip the cabbage, and repeat on the remaining sides.
Roast for 30 to 40 minutes, rotating the baking sheet so all sides are well browned and tender in the middle.
Season to taste with salt and pepper.

Or, season them with lemon juice and tahini sauce to add a tangy citrus flavor. You can even add quinoa, mashed potatoes, or creamy polenta with pickled red onions, feta cheese, and tahini sauce to make a meal out of your cabbage steak!
